Apple Mail: untick Always match my default message font underneath the signature, or the formatting is stripped. The logo may look blank while you write — that is Mail’s privacy setting, not a problem with your signature, and everyone you send to will still see it. To see it yourself, turn off Mail › Settings › Privacy › Protect Mail Activity.
